Serena & Stephen’s Skillet of Sweet Fire and Forever

A warm, rustic casserole layered with ranch beans, corn, mango, peppers, and tender chicken—tied together with herbs, spice, and love.

-🛒 Ingredients

- 1 can ranch-style beans (undrained)

- 1 can corn, drained

- 1 ripe mango, peeled and mashed or diced

- 1 small potato, boiled and roughly mashed with a fork

- 1 chicken breast or thigh, cooked and browned

- ½ jalapeño, finely chopped

- 2 Thai peppers, finely chopped

- 1 handful fresh spinach, chopped

- Fresh herbs: chopped basil, dill, and cilantro (divided)

- 1–2 tsp apple cider vinegar

- Salt & pepper, to taste

- Shredded cheddar cheese, for topping

--🔪 Instructions

1. Prepare the Base

In a skillet, combine the ranch beans and drained corn. Simmer gently to warm through.

2. Mash the Potato

Roughly mash the cooked potato with a fork. Season with salt, pepper, and a pinch of herbs. Set aside.

3. Make the Mango-Pepper Mix

In a bowl, combine the mashed or diced mango, chopped jalapeño, Thai peppers, chopped spinach, and half of the herb blend. Add 1–2 tsp apple cider vinegar and stir gently.

4. Combine Everything

Add the browned chicken to the skillet with the beans and corn. Fold in the mango-pepper mixture. Simmer for 3–5 minutes to let the flavors marry.

5. Assemble the Bake

Transfer everything to a baking dish. Spread the mashed potatoes over or around the edges. Top with shredded cheddar cheese.

6. Bake

Bake at 350°F (175°C) for 15 minutes, until the cheese is melted and bubbly.

7. Finish with Love

Remove from the oven and sprinkle with the remaining fresh herbs. Let rest for 5 minutes before serving.
